Tawnshi Charcuterie was proud to make its debut at the annual Tourism & Events Industry Open House as a preferred catering vendor at The Polygon Gallery.

Celebrating "Life in Colour"
Inspired by the season and The Polygon Gallery's vibrant spring exhibition by Tania Willard, this year's event embraced the theme "Life in Colour"—a celebration of creativity, connection, and the shared experiences that bring people together.
As part of our Activation Station, Tawnshi presented two signature modern Indigenous canapés that reflected our approach to contemporary Indigenous cuisine: thoughtfully crafted, locally inspired, and designed to spark conversation.

Apple Sage Butter Smokey Bison
Featuring jellied cedar, brie, walnut, and baked bannock, this canapé balanced rich savoury flavours with subtle sweetness and texture. The combination highlighted Indigenous ingredients in a format that felt both familiar and unexpected.

Sockeye Salmon Mousse
Served on a parmesan bannock crisp and finished with sea asparagus, this canapé celebrated the flavours of the Pacific Northwest while showcasing the versatility of Indigenous ingredients.
